1 Can of solid white albacore tuna or canned salmon
2 Green onions sliced or 1 small shallot chopped
1 Cup of cherry tomatoes cut in half
2 tbsp of chopped basil or parsley
1/2 cup of uncooked canellini beans or 1 can of cooked beans
1 Lemon
Olive oil
Red pepper flakes
Soak beans overnight. Drain them the next day and put them in a pot. Then cover by 4 inches with cold water and bring to a boil. Lower to a simmer and cover. Cook for 40 minutes to 1 hour, keep checking until they have soft but firm texture.
Mix tomatoes, basil, and green onion in a bow. Add the cooked beans and the tuna and season with olive oil, lemon and red pepper flakes. Salt and pepper to taste.
